ORIGIN
Although Colombia is the third largest producer of coffee in the world after Brazil and Vietnam; the country still exports a staggering nine million bags of coffee approximately per year. Colombia’s size alone contributes to a diverse range of cup profiles due to plentiful variations in microclimates created by mountainous terrain, nutrient-rich soils, proximity to the Equator, good rainfall and of course, differences in varieties and processing techniques. This coffee is cultivated by farmers around Gaitania village located near Santiago Perez, Atacamo, in the coffee region of Tolima situated in the centre-west of the country.
PRODUCER
La Asociación de Productores Agropecuarios y Comercializadores de Santiago Pérez (ASOSPAC) was founded in 2017 with 29 member farms, and today has 50 participating smallholder producers. The nonprofit organization promotes their common socio-economic interests and supports rural development projects. One of the strengths of the association is to offer training so that producers can achieve higher prices for their coffee through schemes such as Fairtrade and Organic certification (FTO). Not only does this help to increase the share of value for their coffee at the farm-level, but it creates fairer conditions for younger coffee producers as they seek to stay in the field of sustainable production by following in the footsteps of their parents.
ROAST
Sourced through our friends at Café Imports, we love this coffee for its expression of a fine Colombian coffee that offers up a great toffee-like body, caramel sweetness and notes of red apple with a critic twist. We have roasted this coffee for both espresso and filter so that you can enjoy this coffee across a range of brew methods to suit your taste!
