The predominant economy of the Western Highlands is coffee cultivation and accounts for 20% of Papua New Guinea’s total production. While there are some estates and plantations, most coffee production comes from smallholder farmers – each with one to two hectares of land where coffee is grown alongside other subsistence crops such as fruit and legume trees. The land is densely forested with mountains and river valleys that experience good rainfall, ample sunlight and cool average temperatures. Producers here have grown coffee for generations and today, specialty coffees from the Waghi Valley are gaining notoriety for their unique regional flavor profile.
PRODUCER
Sourced through our friends at Café Imports, this naturally processed ‘garden coffee’ is a blend of Arusha, Bourbon, and Typica varieties that are commonly grown in the region. Once the cherries are harvested, they are delivered to the Kindeng Dry Mill, located in the Jikawa province of the Western Highlands. Following a period of sorting where only the ripe red cherries are selected, they are dried on raised beds and canvass for up to one month. During this time, the cherries are regularly turned by hand on a regular basis to ensure an even moisture content throughout the lot. The coffee is then ‘rested’ in a cool and dry warehouse, hulled, milled, and prepared for export.
ROAST
For the first time, we are excited to source and roast coffee from this incredibly rich and bio-diverse coffee producing country. Roasted gently for filter, we absolutely love the complex flavour profile of this festive coffee! You can expect intense florals of lavender with a winey anona-like acidity, a dark chocolatey body and lots of stewed blackberry sweetness followed by spicy cinnamon in the finish.
