ORIGIN
Amongst neighbouring Central American coffee-growing countries like Costa Rica, El Salvador, and Guatemala, Honduras exports more volume than any other nation in the region. Coffee cultivation still accounts for a large part of the national export revenue – of which millions directly or indirectly depend on for a livelihood.
The country has ideal conditions to produce exceptional coffees due to its high elevations, fertile volcanic soils and ideal climate that is suited to coffee cultivation. Supported by significant investment from the Honduran government through the national body IHCAFE, there is a lot of expertise and heightened awareness of the specialty coffee market in this renowned coffee producing country.
PRODUCER
The Montecillos region sits along the border with El Salvador, and is knownfor its stunning landscape and high elevations which is ideal for coffee growing. Producer, Herly Urquia owns and manages the 20-hectare farm, Finca Caviflor, which grows mainly Catuai and IHCAFE 90 varieties. The farm is known for its abundance of wild birds; specifically hummingbirds which help to pollinate the coffee during the flowering season.
Herly is in the process of building new fermentation tanks to continue to experiment with new processing techniques such as pulped natural or the ‘honey’ process which originated in neighbouring Costa Rica. This helps producers differentiate their coffees and appeal to consumers – and for these reasons, the honey process has steadily gained popularity. Small quality-focused producers in Honduras have recently started to adopt this hybrid process – resulting in more fruit-forward and floral flavors in the cup.nsity and ripeness to achieve the correct grade of quality before being sun dried on patio beds.
