ORIGIN
Coffee production in Brazil is responsible for more than one third of all coffee cultivated worldwide. The environment and climate provide in the southeast of the country benefits from ideal growing conditions for a number of coffee varieties. The country produces a staggering amount – approximately 50-60 million bags annually – and more than five million people are directly employed in the cultivation, harvesting or processing of coffee.

 

PRODUCER
Sourced through our friends at Falcon Specialty, this coffee has been cultivated by members of the Cocatrel Cooperative – now the second largest Cooperative in Brazil. Founded in 1961 in Tres Pontas, Sul de Minas Gerais, there are now more than 6000 members where more than 50 percent of producers grow coffee on land less than ten hectares in size. All the coffee collected is electronically tagged and recorded on delivery with a unique QR code giving full traceability back to the producer.

Caixa De Fruta – which translates as ‘Box of Fruits’ – is a blend of varieties selected for their creamy milk chocolate profile by the team in the Cocatrel Direct cupping Laboratory. All the coffee cherries are dried in static boxes which are vented at the bottom to allow for air to be circulated from below. After it is dried, the coffee is then left to rest for approximately 1-2 weeks before being milled. This method has allowed the production of more fruity and prominent profiles from the usual profile we associate with natural-processed coffee from Brazil.

 

ROAST
This coffee is a great example of a classic crowd-pleasing Brazilian coffee that is easy-going and accessible. We have developed this coffee in the roast using a relatively long roast profile to emphasise the creamy, chocolatey body whilst retaining a balanced acidity that reminds us of red fruits. The coffee also has a very pleasant almond nuttiness and mellow caramel sweetness that lingers in the smooth finish.This coffee tastes great for filter or espresso and can be equally paired with milk for a comforting and delicious coffee tasting experience.
