ORIGIN
Coffee production in Brazil is responsible for more than one third of all coffee cultivated worldwide. Although overall production yields year-to-year, the country produces a staggering amount; approximately 60 million sacks (60kgs) of green coffee annually. Coffee is mainly produced in the south-eastern states of Minas Gerais, Sao Paulo and Paraná. Here, the terroir and climate provide ideal growing conditions for a number of varieties and more than five million people are directly employed in the cultivation, harvesting or processing of coffee.
PRODUCER
Coffee growing in Carmo de Minas has been in the Pereira family since 1979. They started by planting new varieties while developing new harvesting and processing techniques to improve quality on the farm. Since making these changes, the coffees from Santa Ines have stood out in regional and national contests. The farm is planted with Catucai, Yellow & Red Catuai, Yellow & Red Bourbon, and Acaia on 100 hectares of land while the rest of the land is set aside for the growing of other agricultural crops such as banana and corn. Annual production is approximately 4,000 bags each year. Known for its characteristic sweetness, nuttiness and chocolate flavours, this classic Yellow Bourbon lot is typically spread to dry on patios or raised beds. The drying time can take 20–25 days, depending on the weather.
ROAST
Sourced through our friends at Café Imports, we love this coffee for its milky mouthfeel and chocolatey flavours. We have gently developed this coffee in the roast to accentuate the smooth body coupled with a caramel sweetness. There is also a pleasant nuttiness in the finish which reminds us of walnut. This coffee can be brewed across a range of methods, including espresso, and pairs perfectly with milk!
