ORIGIN
Coffee production in Brazil is responsible for more than one third of all coffee cultivated worldwide. The environment and climate provide in the southeast of the country benefits from ideal growing conditions. The country produces a staggering amount – approximately 50-60 million bags annually – and more than five million people are directly employed in the cultivation, harvesting or processing of coffee in the country.
PRODUCER
Fazenda Barreiro was founded in 1820 by Joaquim Bernardes da Costa Junqueira, who acquired then-uncultivated land around the spa town of Poços de Caldas in the southern region of Minas Gerais. His son, Agostinho José da Costa Junqueira, planted the first coffee fields towards the end of the 19th century, at an average altitude of 1150m in the fertile lands and mild climate of the São Domingos Mountain Range.
Over the past 30 years, his great grandson, Francisco Otávio Lotufo and family have sought to combine the family’s coffee growing traditions with a commitment to farming in an environmentally and socially responsible way. Francisco is dedicated to preserving the farm’s woods, water sources, native birds and animals, as well as supporting the 30 employees who live on the farm.
When the coffee is ripe it is either mechanically or hand picked depending on the location of the plot on the farm. The coffee is then taken to the patio to dry between 5 – 7 days while being turned regularly during. The coffee is then transferred to mechanical driers to finish at 28ºC for nine hours a day until the moisture content reaches approximately 11%. The beans are then placed in storage bins to rest before being bagged and prepared for export.
ROAST
Sourced through our friends at Falcon Specialty, this is a single variety lot of the classic cultivar Yellow Bourbon. Thanks to the hard work of the producer and miller, the coffee has been exceptionally well processed which brings clarity to the cup. We have adopted a long, gentle roast profile to slowly develop the milk chocolatey body. We love this coffee for its rich nuttiness that reminds us of almond roasted and a surprisingly sweet cherry note in the finish. Perfect for espresso or filter.
